Strawberry season has started, or at least it's possible to find strawberries for reasonable prices at the grocery store which is how I consider the season to start. My favorite thing to do with strawberries? Make oven pancakes of course! I love them so much that I include them in our dinner line up during the summer. Why not?
You'll notice in the photo below that I bake them in my cast iron skillets. I know that cast iron skillets aren't in everybody's kitchen but you really ought to think about investing in some. Or better yet, go to Goodwill and find some used ones that are already seasoned. My Mom has nicely seasoned black cast iron skillets and when I got my brand spanking new ones as a wedding gift I was shocked to discover that they were silver. After 7 years of seasoning they are now a seasoned black just like Mom's and don't stick very often. There are several dishes I always cook in cast iron because that's the way I know how. Thanks Mom!
If you don't have the luxury of owning nicely seasoned cast iron then you can also use a glass dish and I also use my small Le Crueset casserole dish but it sticks more then the cast iron. Cast iron is really the way to go.
Enough chit chat, I'm sure you're ready to make one and eat it already. I know I am!
Oven Pancakes
1/2 cup Flour
1/2 cup Milk
2 Eggs, slightly beaten
Dash of Salt
Dash of Nutmeg
Mix ingredients together, batter will be lumpy. Melt 2-3 Tbsp of butter in cast iron skillet. Pour in batter and bake at 450 degrees for 15-20 minutes or until golden brown. Serve with lemon juice, powdered sugar, and fresh fruit (strawberries are the best!).
How can you resist this yumminess? I couldn't. I ate this entire pancake for dinner last night. In fact looking at these pictures is making me want another one. I think I may need to buy more strawberries.

PS I also recommend cast iron! You should do a post on how to properly season a new pan. They are pretty cheap and last FOREVER and a day, but most people have no idea where to begin.
